5 Ingredient Peppermint Crack

Tis the season for all things peppermint…. enter peppermint crack! This recipe is one of my favorites because you don’t have to have a knack for baking. It’s simple, sweet, and versatile. Peppermint crack is perfect for that Christmas party that you volunteered to bring snacks for or to bring to your future in-laws house to impress them (especially if you can’t cook). You can also pair this with a nice Christmas card and put these in cute Christmas baggies from the dollar store to give out to your coworkers like I did (hello budget friendly!).  Warning: this is not the dish you bring to the holiday party with all of your healthy friends!

Ingredients:

50 saltine crackers (about 1 ½ sleeves)

1 cup of unsalted butter

1 cup of brown sugar

2 cups of white chocolate chips

6 candy canes coarsely crushed

Directions:

  1. Preheat oven to 400 degrees

  2. Line a cookie sheet with aluminum foil (you can also use parchment paper here) and then line the cookie sheet with 1 layer of saltines

  3. Combine butter and brown sugar in a saucepan over medium heat and bring to a boil. Stir the mixture constantly. Pour the mixture over the saltine crackers.

  4. Place the cookie sheet in the oven for roughly 7 minutes or until the crackers are brown. While the dish is in oven use this time to crush your candy canes. You can also break the candy canes into smaller pieces and put them in your food chopper.

  5. Remove the cookie sheet from the oven and cover the caramelized crackers with the white chocolate chips. Let it sit and allow the chocolate chips to melt (if you’re in a rush like me, you can pop them in the oven for a minute or two).

  6. Use a spatula to spread the chocolate. Sprinkle your crushed candy canes on top and put in the fridge or freezer for 20-30 minutes to harden the chocolate.

  7. Break into pieces and store in an airtight container for up to 5 days
